The author, a converted vegetarian, points out that meatless meals, when properly prepared, are both delicious and well-balanced. Writing from a health as well as a culinary point of view, she emphasizes that all elements of nourishment, including proteins, may be found in dishes that contain no meat. At the conclusion she suggests menus for breakfast, lunch and dinner, gives many helpful hints on the preparing of food and lists eighteen spices recommended for the recipes in this book.

"Vegetarian cooking," she writes, "is much easier, faster and cleaner than cooking with meat. Also, you have control over the amount of grease used, whereas you have little or no control over the amount of grease in meat. Vegetable shortening is much lighter than meat fat, and the pans are much easier to clean.

"Unfortunately most people have badly mistaken concept of vegetarian food. They think that meat is everything because they have been raised on it; and if they don't have it, they feel that they have not really eaten and are undernourished. Little do they know that vegetarians have
access to and enjoy a great variety of delicious, wholesome foods. For example, a nourishing vegetarian meal might consist of beans and rice as the main dish, fried green bananas or fried spinach as a side dish, cucumber-and-yogurt salad, green-tomato pickle, puries or chapatties
or bread, and carrot halwa for dessert.

"The one big secret about vegetarian food is that it is prepared with spices that make any food so delicious you feel you would like to enjoy the same dish every day. Most of the spices used in this book are so mild that even a small child may eat them. Spices make food flavorful and
appealing to even the poorest appetite; and when you enjoy your food, it is a great help to the digestive tract. Vegetarian food is a whole world in itself, and when you unlock the door, you will enjoy yourself immensely, as do I."

Since no one confines his diet exclusively to meat, the recipes in this book will bring pleasure and satisfaction to non vegetarians and vegetarians alike. Vegetarian Delights will be a valuable addition to every house wife's culinary library.
